Ingredients
3 pounds strawberries, washed and hulled
1 cup sugar
1 cup water
Directions
- In a large pot, combine sugar and water. Mix over low heat until the sugar has dissolved, then turn up the heat and bring to a boil.
- Drop in half of the strawberries. Return to a boil and cook for one minute.
- Set a colander inside of a large bowl (to help catch strawberry juice). Using a perforated spoon, transfer the strawberries to the colander.
- Repeat the cooking process with the other half of the strawberries.
- Once the strawberries have been strained, add the strawberry juice to the pot. Boil the syrup for about 5 minutes, or until it has been reduced to its original volume.
- Pour the drained strawberries into the syrup. Simmer for 5 minutes, stirring gently. Be careful not to crush the strawberries.
- When the strawberries are coated in the syrup, remove the pan from the heat.
