Ingredients

6 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
2 teaspoons salt
1 1/2 cups mayonnaise
2 cups firmly packed brown sugar
1 1/2 cups granulated sugar
3 cups cooked, solid squash or pumpkin
2 cups dried cranberries

Directions

  1. Preheat oven to 350 F.
  2. Combine flour, baking powder, baking soda, and spices. Set aside.
  3. Blend mayonnaise with sugars. Combine with Pumpkin. Add in dry ingredients and mix until blended. Fold in dried cranberries.
  4. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet.
  5. Press lightly with the palm of your hand.
  6. Bake at 350 F for 15-20 minutes, or until cookies are firm and lightly browned.
