Ingredients
6 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
2 teaspoons salt
1 1/2 cups mayonnaise
2 cups firmly packed brown sugar
1 1/2 cups granulated sugar
3 cups cooked, solid squash or pumpkin
2 cups dried cranberries
Directions
- Preheat oven to 350 F.
- Combine flour, baking powder, baking soda, and spices. Set aside.
- Blend mayonnaise with sugars. Combine with Pumpkin. Add in dry ingredients and mix until blended. Fold in dried cranberries.
- For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet.
- Press lightly with the palm of your hand.
- Bake at 350 F for 15-20 minutes, or until cookies are firm and lightly browned.
