Pumpkin
Olive Oil
Salt & pepper
Other seasonings of your choice
Directions
- Heat oven to 375 °F.
- Cut top off pumpkin, or for smaller pumpkins, you can cut them open lengthwise.
- Remove seeds and pulp from pumpkin and separate seeds from pulp.
- If desired, wash seeds to remove all excess strings and pulp. Pat dry with paper towels.
- Place seeds on parchment lined baking sheet, drizzle with olive oil, and sprinkle with salt & pepper or whatever spices you like! Toss to coat.
- Roast for 10-15 minutes, then let cool on sheet pan.
